Chef-Owner, René Frank, has developed his own non-conformist approach to cooking. Categories such as sweet and savoury simply don't exist. What started as a dessert bar in 2016 has transformed into a fine dining restaurant serving non-binary dishes.

René draws inspiration from all over the world. CODA wouldn't be the same without his experiences abroad that shaped his culinary vision.

In 2022 we filmed and took photos with René Frank for a personal project, Piura Blanco Cacao.

Coda in Berlin produces their chocolate in-house, which is fascinating to watch and learn from. The cacao he used for this dessert is the rare Piura Blanco Cacao from nothern Peru.

This dish is refined sugar free and sources its sweetness from natural ingredients such as purple carrots. Also on the plate is Purple Chicory with Dried Purple Carrot Pearls and a Hazelnut Foam. Topped with a crisp of Caramelised Cacao Nibs and Hazelnuts for texture.
